Mousse Preparation

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Separate the Eggs

    While the chocolate mixture is cooling, separate the egg whites and egg yolks into two different bowls.

    Whisk the Egg Yolks

    Add granulated sugar and vanilla extract to the bowl with the egg yolks. Whisk together until the mixture is pale and creamy.

    Combine Chocolate with Yolks

    Slowly pour the cooled chocolate mixture into the egg yolk mixture, stirring continuously until well combined.

    Whip the Egg Whites

    In a clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form.

    Fold in Egg Whites

    Carefully fold the whipped egg whites into the chocolate mixture in three additions. Be gentle to maintain the airiness.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
