Cake Preparation

  1. 1

    Melt Chocolate and Butter

Preheat the oven to 425°F (220°C). In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  2. 2

    Mix Dry Ingredients

In a separate bowl, whisk together the powdered sugar, all-purpose flour, and a pinch of salt until well combined.

  3. 3

    Combine Ingredients

Once the chocolate and butter mixture has cooled slightly, add the sugar-flour mixture to the bowl. Stir until just combined.

  4. 4

    Add Eggs and Vanilla

Add the large eggs, large egg yolks, and vanilla extract to the mixture. Stir gently until the batter is smooth and no lumps remain.

  5. 5

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with flour to prevent sticking. Pour the batter evenly into each ramekin, filling them about 3/4 full.

  6. 6

    Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft and jiggly.

  7. 7

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate to release the cake. Serve immediately with a scoop of vanilla ice cream on the side.
