Chicken Preparation
Prepare the Chicken
Pound the chicken breasts to an even thickness for even cooking.
Prepare Breading Stations
Set up three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with grated Parmesan cheese.
Bread the Chicken
Dredge each chicken breast in the flour, then dip into the egg, and finally coat with Parmesan cheese.
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side or until golden brown and cooked through. Remove from skillet and let rest.

Make the Boursin Spread
In a medium bowl, combine softened cream cheese, minced garlic, chopped herbs, salt, and pepper. Mix until well combined and creamy. Set aside.
Sandwich Assembly
Assemble the Sandwich
Cut ciabatta rolls in half and spread a generous amount of garlic herb Boursin on both sides.
Add Chicken and Peppers
Place a piece of the Parmesan-crusted chicken on the bottom half of the ciabatta, top with sliced piquillo peppers and lettuce if using. Close the sandwich.
Serve
Slice the sandwich in half and serve immediately. Enjoy your delicious chicken sandwich!
