Calamari Preparation

    Prepare the Calamari

    Start by cleaning and slicing the fresh calamari into rings. Pat them dry with paper towels to remove excess moisture.

    Mix the Dry Ingredients

    In a medium bowl, whisk together the flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

    Coat the Calamari

    Dip each calamari ring into the beaten egg, allowing any excess to drip off, then dredge in the flour mixture until fully coated. Set aside.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Marinara Sauce Preparation

    Heat the Olive Oil

    In a saucepan over medium heat, add the olive oil.

    Sauté the Garlic

    Once the oil is hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add the Crushed Tomatoes

    Pour in the canned crushed tomatoes, and stir to combine with the garlic.

    Season the Sauce

    Add the oregano, basil, salt, black pepper, and red pepper flakes. Stir well and let the sauce simmer for about 15 minutes, stirring occasionally.

    Garnish and Serve

    Once the sauce is ready, remove it from heat and garnish with fresh parsley. Serve alongside the fried calamari.
