Salad Base

Method

Preparation of Ingredients

  1. 1

    Wash and Chop Romaine

Wash the romaine lettuce thoroughly under cold water. Dry it using a salad spinner. Chop the lettuce into bite-sized pieces and place it in a large salad bowl.

  2. 2

    Make Croutons

If using store-bought croutons, skip to the next step. To make homemade croutons, preheat your oven to 375°F (190°C). Cut day-old bread into cubes, toss them with olive oil, salt, and garlic powder, and bake for 10-15 minutes until golden brown.

  3. 3

    Prepare Crispy Capers

Rinse the capers under cold water. Heat olive oil in a skillet over medium heat. Add the capers and fry until they are crispy, about 3-5 minutes. Drain on paper towels.

Making the Dressing

  1. 4

    Combine Dressing Ingredients

In a mixing bowl, combine mayonnaise, grated Parmesan cheese, black pepper, lemon juice, and minced garlic. Whisk until the mixture is smooth and creamy.

Assembling the Salad

  1. 5

    Toss Salad Ingredients

Add the chopped romaine lettuce to the bowl. Pour the dressing over the lettuce and gently toss until the romaine is well coated.

  2. 6

    Add Croutons and Capers

Sprinkle the croutons and crispy capers over the top of the salad. Toss gently to combine.

  3. 7

    Prepare Gremolata

In a small bowl, mix together chopped hazelnuts, parsley, and lemon zest. Sprinkle this gremolata over the salad for added flavor.
