Preparation of Yellowtail Collar

    Season the Fish

    Sprinkle the yellowtail collars with salt and black pepper evenly on both sides.

    Preheat the Grill or Pan

    Preheat your grill or a heavy skillet over medium-high heat until hot.

    Sear the Collar

    Place the seasoned yellowtail collars skin-side down on the grill or skillet. Sear for about 4-5 minutes until the skin is crispy and golden.

    Flip and Cook

    Carefully flip the collars and cook for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork.

    In a mixing bowl, combine soy sauce, citrus juice, rice vinegar, mirin, and dashi stock. Stir well to mix thoroughly.

    Add finely chopped green onions and sesame oil to the mixture. Stir again to combine.
