Sprinkle the yellowtail collars with salt and black pepper evenly on both sides.

Flip and Cook
Carefully flip the collars and cook for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork.

Combine Ingredients
In a mixing bowl, combine soy sauce, citrus juice, rice vinegar, mirin, and dashi stock. Stir well to mix thoroughly.

Add Green Onions and Sesame Oil
Add finely chopped green onions and sesame oil to the mixture. Stir again to combine.

Taste and Adjust
Taste the ponzu sauce and adjust the seasonings as needed. You can add more citrus for acidity or soy sauce for saltiness.
