    Prepare the Crab Filling

    In a mixing bowl, combine the imitation crab meat, softened cream cheese, finely chopped green onions, mayonnaise, lemon juice, garlic powder, salt, and black pepper. Mix well until all the ingredients are thoroughly combined and the crab mixture is creamy and smooth.

Sushi Rice Preparation

    Cook the Sushi Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rice with 1.25 cups of water in a pot, bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes. Fluff the rice with a fork and let it cool slightly.

    Assemble the Crab Rolls

    Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving about 1 inch at the top. Place a line of crab filling across the center of the rice. Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

    Using a sharp knife, slice the sushi roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to keep the edges clean.
