Marinate Chicken
Cut chicken thighs into bite-sized pieces and add them to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.
Prepare Skewers

Soak Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

Assemble Skewers
Thread marinated chicken pieces onto skewers, alternating with vegetables if desired. Leave some space between each piece for even cooking.
Make Teriyaki Sauce

Combine Ingredients
In a small saucepan, combine soy sauce, mirin, and brown sugar. Heat over medium heat until sugar dissolves.

Thicken Sauce
In a small bowl, mix cornstarch and water to create a slurry. Slowly stir this mixture into the saucepan while cooking, until the sauce thickens. Remove from heat and set aside.
