Prepare the Vegetables
Wash and slice all the vegetables into thin strips or bite-sized pieces. Ensure they are dry before battering.

Make the Tempura Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the ice water to the dry ingredients, stirring gently until just combined. Do not overmix; the batter should be lumpy.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Batter the Vegetables
Dip the prepared vegetables into the tempura batter, ensuring they are fully coated but shaking off any excess batter.

Fry the Vegetables
Carefully place the battered vegetables into the hot oil in batches, frying them for about 2-3 minutes or until golden brown and crispy. Do not overcrowd the pot.

Drain and Serve
Use a slotted spoon to remove the fried tempura from the oil and drain on paper towels. Serve hot with a dipping sauce of your choice.
