Chop Vegetables
Wash and chop the zucchini, bell peppers, carrots, red onion, and cherry tomatoes into bite-sized pieces. Set aside.

Prepare Spinach
Rinse the spinach leaves under cold water, then pat dry with a kitchen towel. Set aside.
Cooking

Sauté the Vegetables
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté for 2-3 minutes until fragrant.

Add Spinach and Seasoning
Stir in the spinach, cherry tomatoes, dried oregano, salt, and black pepper. Cook for an additional 3-4 minutes until the spinach wilts and the tomatoes are slightly blistered.

Serve
Remove the skillet from the heat and serve the vegetable medley warm as a side dish or a main course.
