Method
Preparing the Rice

Rinse the Sushi Rice
Rinse 2 cups of sushi rice under cold running water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
Fluff the cooked rice with a fork and let it cool slightly. Optionally, you can mix in a little rice vinegar for flavor.
Cooking the Unagi

Prepare the Unagi
If using pre-cooked unagi, skip this step. If preparing from scratch, grill the eel on medium heat for about 5-6 minutes on each side until fully cooked and slightly charred.

Make the Sauce
In a small saucepan, combine 4 tablespoons of soy sauce, 2 tablespoons of mirin, 1 tablespoon of sugar, and 1 tablespoon of sake. Heat over medium heat until the sugar dissolves and the sauce thickens slightly, about 5 minutes. Remove from heat.

Assembling the Dish

Plate the Rice
Divide the seasoned sushi rice into serving bowls or plates, creating a bed for the unagi.

Add the Unagi
Place the glazed unagi on top of the rice in each bowl.

Garnish
Sprinkle chopped green onions, shredded nori, and sesame seeds over the top of the unagi and rice before serving.
