Sushi Preparation

Rinse the Sushi Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes. This removes excess starch.

Cook the Sushi Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let it steam covered for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice has finished steaming, transfer it to a large bowl and gently fold in the vinegar mixture using a wooden spoon. Allow it to cool to room temperature.

Assemble Sushi Rolls
Lay a sheet of nori shiny side down on a bamboo sushi mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place slices of salmon, tuna, cucumber, and avocado in a line across the center of the rice. Roll the sushi tightly from the bottom using the mat as a guide, and seal the edge with a little water.

Cut the Rolls
Using a sharp knife dipped in water, cut the sushi rolls into 6-8 pieces. Clean the knife after each cut to ensure clean edges.

Serve
Arrange the sushi rolls on a platter with slices of sashimi. Serve with soy sauce, wasabi, and pickled ginger on the side.
