Prepare Rice

    Cook the Rice

    Rinse the short-grain rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot and cook according to the rice cooker instructions or bring to a boil, then reduce the heat, cover, and simmer for about 18-20 minutes. Once cooked, let it sit for 10 minutes before fluffing with a fork.

Prepare Vegetables

    Sauté Carrot and Zucchini

    Julienne the carrot and zucchini. Heat a small amount of oil in a pan over medium heat. Sauté the carrot for 2-3 minutes until slightly softened, then add the zucchini and cook for another 2-3 minutes. Remove from heat and set aside.

    Blanch Spinach

    Bring a pot of water to a boil. Add the spinach and blanch for about 30 seconds. Drain and rinse under cold water to stop the cooking process. Squeeze out excess water and set aside.

    Sauté Mushrooms

    In the same pan, add a little more oil if needed. Sauté the mushrooms over medium heat until softened, about 5 minutes. Season with a pinch of salt and set aside.

    Sauté Bean Sprouts

    Sauté the bean sprouts in the pan for about 2-3 minutes until slightly tender. Remove from heat.

Prepare Protein

    Marinate the Protein

    In a bowl, combine soy sauce, sesame oil, minced garlic, and sugar. Add the sliced beef or chicken and let it marinate for at least 30 minutes.

    Cook the Protein

    Heat a pan over medium-high heat. Add the marinated protein and cook until browned and cooked through, about 5-7 minutes. Remove from heat.

Prepare Spicy Pepper Sauce

    Mix the Sauce

    In a small bowl, mix together gochujang, sesame oil, sugar, and water until well combined. Adjust seasoning to taste.

Assemble the Bowl

    Fry the Eggs

    In a non-stick skillet, fry the eggs sunny-side up until the whites are set but the yolks remain runny.

    Layer the Ingredients

    In a stone bowl or a regular bowl, layer the cooked rice at the bottom. Arrange the sautéed vegetables, cooked protein, and blanched spinach on top of the rice. Place the fried egg on top.

    Add Sauce and Garnish

    Drizzle the spicy pepper sauce over the assembled bowl and sprinkle with sesame seeds and sliced green onions. Serve hot.
