Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels. Make sure they are fully peeled and deveined.

Make the Batter
In a large bowl, combine all-purpose flour, cornstarch, baking powder, and salt. In a separate bowl, whisk together the ice water and egg yolk. Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined. The batter should be lumpy and cold.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and float.

Fry the Shrimp
Dip each shrimp into the tempura batter, allowing the excess to drip off. Carefully place the batter-coated shrimp into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, mix together soy sauce, rice vinegar, mirin, and grated daikon radish. Stir well to combine.
