Prepare the Marinade
In a mixing bowl, combine soy sauce, mirin, sake, and sugar. Whisk until the sugar is dissolved.

Marinate the Salmon
Place the salmon fillets in a resealable plastic bag or shallow dish. Pour the marinade over the salmon, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Preheat the Grill or Oven
If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 375°F (190°C).

Prepare the Green Onions
While the salmon marinates, wash and chop the green onions into thin slices, separating the green parts from the white parts.

Cook the Salmon
Remove the salmon from the marinade and let excess marinade drip off. If grilling, brush the grill grates with sesame oil and place the salmon skin-side down. Grill for about 5-7 minutes per side, or until the salmon is cooked through and flakes easily with a fork. If baking, place the salmon on a lined baking sheet and bake for about 15-20 minutes or until cooked through.

Once cooked, remove the salmon from the grill or oven. Sprinkle with chopped green onions (green parts) and sesame seeds. Season with salt and pepper to taste.
