Sushi Rolls
Soup or Salad (optional)
Method
Prepare Sushi Rice
- 1
Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear.
- 2
Cook the Rice
In a rice cooker or pot, combine the rinsed sushi rice with 2 cups of water. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low and cover for 18-20 minutes.
- 3
Season the Rice
Once cooked, remove the rice from heat and let it sit covered for 10 minutes. Then transfer to a bowl and gently fold in rice vinegar, sugar, and salt while the rice is still warm. Let it cool to room temperature.
Prepare the Rolls

- 5
Assemble the Rolls
Lay a nori sheet on a bamboo sushi mat, shiny side down. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top. Place the fillings (cucumber, avocado, and tuna) in a line across the rice.
- 6
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently, until you reach the exposed edge of the nori. Wet the edge with water to seal the roll. Repeat with remaining ingredients.
Serving
- 7
Slice and Serve
Using a sharp knife, slice each roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side. Optionally, prepare soup or salad.
- 8
Prepare Miso Soup (if requested)
In a pot, heat dashi stock. Once warmed, dissolve miso paste in a small amount of stock, then stir back into the pot. Garnish with sliced green onions before serving.
