Jalapeno Preparation

Prepare the Jalapenos
Wash the jalapeno peppers thoroughly and slice off the tops. Carefully remove the seeds and membranes using a small knife or spoon, making sure not to break the peppers.

Make the Filling
In a mixing bowl, combine the cream cheese and spicy tuna mix. Stir well until the mixture is smooth and evenly combined.

Stuff the Peppers
Using a small spoon or a piping bag, carefully fill each jalapeno pepper with the cream cheese and spicy tuna mixture until they are full but not overflowing.
Breading and Frying

Prepare the Breading Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Jalapenos
One by one, roll each stuffed jalapeno in the flour, then dip it in the beaten eggs, and finally coat it with panko breadcrumbs. Make sure they are evenly coated.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Jalapenos
Carefully add the breaded jalapenos to the hot oil in batches, frying them for about 3-4 minutes or until they are golden brown. Remove them using a slotted spoon and drain on paper towels.

Once the jalapeno bombs are fried and drained, place them on a serving platter and drizzle with eel sauce. Serve hot.
