Method
Preparing the Sashimi

Slice the Fish
Using a sharp knife, slice the salmon, tuna, yellowtail, and octopus into thin sashimi pieces.

Arrange the Sashimi
On a serving platter, arrange the sliced sashimi neatly, ensuring each type is displayed distinctly.
Preparing the Rice

Rinse the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat and simmer covered for 20 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Once the rice is cooked, gently fold this mixture into the rice while it’s still warm. Let it cool to room temperature.
Making the Spicy Sauce

Combine Ingredients
In a small bowl, combine gochujang, soy sauce, sesame oil, minced garlic, honey, and lime juice. Mix well until smooth.
Assembling the Dish

Prepare the Vegetables
Wash and dry the leafy greens. Thinly slice the cucumber and radish.

Assemble the Hae Dupp Bap
On a serving plate, place a mound of sushi rice in the center. Arrange the sliced sashimi, leafy greens, cucumber, and radish around the rice. Drizzle with the spicy sauce before serving.

Serve immediately with extra spicy sauce on the side for those who wish to add more heat.
