Prepare the Filet
Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps ensure even cooking.

Season the Meat
Rub both sides of the filet mignon with olive oil, then season generously with salt and black pepper. Make sure to coat the edges as well.

Sear the Filet
Heat a large skillet over medium-high heat. Once hot, add the filet mignon to the pan. Sear for about 4-5 minutes on one side without moving it, until a golden-brown crust forms.

Flip and Add Aromatics
Flip the filet mignon and add the garlic cloves and rosemary to the pan. Cook for another 4-5 minutes for medium-rare, or longer if desired.

Rest the Meat
Remove the filet mignon from the skillet and transfer it to a cutting board. Cover loosely with foil and let rest for 5-10 minutes. This allows the juices to redistribute.
