    If you haven't done so already, cook the Jasmine rice according to package instructions. Allow it to cool completely, ideally refrigerating it overnight for best texture.

    Prepare the Ingredients

    Dice the onions, carrots, and cooked chicken. Mince the garlic. Measure out the peas and shrimp. Chop the green onions and set aside.

Frying

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Sauté Aromatics

    Add the minced garlic and diced onion to the hot oil. Sauté for about 2-3 minutes until the onions are translucent.

    Cook the Vegetables

    Add the diced carrots and frozen peas to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until the carrots are tender.

    Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until just set, about 2 minutes. Then, add the diced chicken and shrimp, stirring everything together.

    Add the cooked rice to the skillet. Pour in the soy sauce and sesame oil. Stir-fry everything together for about 5 minutes until the rice is heated through and the flavors are well combined.

    Remove the skillet from heat and fold in the chopped green onions. Adjust seasoning with additional soy sauce if needed.
