    Cook the Brown Rice

    Rinse the brown rice under cold water. In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes or until the rice is tender and water is absorbed.

    Prepare the Vegetables

    While the rice is cooking, wash and chop the broccoli and bell peppers into bite-sized pieces.

    Cook the Chicken Breast

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with salt, black pepper, and garlic powder. Add the chicken to the skillet and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from skillet and let rest before slicing.

    Cook the Shrimp

    In the same skillet, add 1 tablespoon of olive oil and heat over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes or until the shrimp are pink and opaque. Remove from the skillet and set aside.

    Stir Fry the Vegetables

    In the same skillet, add the chopped broccoli and bell peppers. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp. Add 3 tablespoons of soy sauce and stir to combine.

Assembly

    Combine and Serve

    On a plate, serve a portion of brown rice, topped with sliced chicken breast and shrimp. Add the stir-fried vegetables on the side. Drizzle with additional soy sauce if desired.
