Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or a pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, reduce heat, cover, and simmer for 20 minutes until the water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Sashimi Toppings

    Slice the Fish

    Using a sharp knife, slice the fresh tuna, salmon, and yellowtail sashimi into thin pieces.

    Prepare Vegetables

    Julienne the cucumber and avocado into thin strips. Set aside.

    Thinly slice the radish (daikon) and set aside.

    Prepare Nori

    Cut the nori sheets into thin strips.

Assemble Chirashi Sushi

    Layer the Ingredients

    In a large bowl or individual serving bowls, start by placing a generous portion of the sushi rice as the base.

    Add Sashimi

    Artfully arrange the sliced tuna, salmon, and yellowtail sashimi over the sushi rice.

    Add Vegetables

    Top the rice with julienned cucumber, avocado, and sliced radish.

    Garnish

    Sprinkle the nori strips over the top, add pickled ginger on the side, and a dollop of wasabi for serving.
