Preparation of Beef

Prepare the Beef
Trim any excess fat from the beef sirloin. Pat the beef dry with paper towels.

Sear the Beef
Heat a skillet over high heat until it is very hot. Sear the beef sirloin for 1-2 minutes on each side until it develops a nice crust but is still rare inside.

Rest the Beef
Remove the beef from the skillet and let it rest for about 5 minutes before slicing.

Slice the Beef
Using a sharp knife, thinly slice the beef against the grain into bite-sized pieces.
Bunji Sauce Preparation

Mix the Sauce
In a small bowl, combine soy sauce, mirin, sesame oil, rice vinegar, grated ginger, minced garlic, and chili flakes. Whisk until well combined.

Garnish
Add the chopped green onions to the sauce mixture and stir to incorporate.
Serving

Plate the Dish
Arrange the thinly sliced beef on a serving platter.

Drizzle Sauce
Drizzle the bunji sauce generously over the beef slices.

Garnish and Serve
Optionally, sprinkle additional chili flakes and green onions on top. Serve immediately.
