Vegan Burger Assembly

Prepare vegan burger patties: In a bowl, combine 1 can (15 oz) of chickpeas (drained and mashed), 1/2 cup finely chopped mushrooms, 1/2 cup breadcrumbs, 1 minced garlic clove, 1 tablespoon soy sauce, 1 teaspoon smoked paprika, 1/2 teaspoon cumin, salt and pepper to taste. Mix until just combined. Form into 4 patties slightly larger than buns.

Cook patties: Heat 1–2 tablespoons oil in a skillet over medium heat. Cook patties 4–5 minutes per side until crisp outside and heated through. Remove and keep warm.

Toast buns: In the same skillet, lightly toast the cut sides of the buns until golden.

Vegan aioli: In a small bowl, whisk 4 tablespoons vegan mayonnaise, 1 teaspoon lemon juice, 1/2 teaspoon Dijon mustard, and a pinch of salt. Set aside.

Roasted onions (optional): Toss sliced red onion with 1 teaspoon olive oil and a pinch of salt. Roast in 400°F (200°C) oven for 12–15 minutes until caramelized.

Assemble burgers: Spread aioli on the bottom buns. Place lettuce, tomato slices, patty, roasted onions (if using), and top with bun. Serve immediately.
