Prep and cheesecloth-free pan

Preheat oven to 350°F (175°C). Lightly grease an 8-inch round cake pan and line the bottom with parchment paper. Lightly grease the parchment to ensure easy release.

Melt chocolate and butter

In a heatproof bowl set over a pot of simmering water (or in a microwave in short bursts), melt the chocolate with the butter, stirring until smooth. Remove from heat and whisk in the espresso powder (if using) and salt. Let cool slightly.

Whisk sugar and eggs

In a separate large bowl, whisk together the granulated sugar and eggs until pale and thick, about 2-3 minutes. This helps create a light crumb and helps with structure without flour.

Combine chocolate with eggs

Temper the eggs by slowly whisking in a small amount of the warm chocolate mixture, then gradually whisk in the rest. This prevents curdling. Stir in vanilla extract.

Sift cocoa powder over the batter and fold gently until just combined and glossy. Do not overmix to keep the cake tender.
