Prep

Prepare chicken

Pat the chicken breasts dry with paper towels. Place in a shallow dish.

Make marinade

In a small bowl, whisk together olive oil, lemon juice, garlic powder, onion powder, paprika, oregano, salt, and black pepper.

Marinate

Pour the marinade over the chicken, turning to coat evenly. Cover and refrigerate for 30 minutes to 2 hours for best flavor. If short on time, proceed immediately.

Grill

Preheat grill

Preheat grill to medium-high heat (about 375-425°F / 190-220°C). Oil the grates or brush the chicken lightly with oil to prevent sticking.

Grill chicken

Remove chicken from marinade, allowing excess to drip off. Grill each breast 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). For thinner breasts, adjust time accordingly.

Rest

Transfer to a platter and let rest for 5 minutes before slicing to keep juices.

Plate and enjoy

Serve grilled chicken with the grilled vegetables on the side. Drizzle with a little olive oil, if desired, and season with a pinch of salt and pepper.
