Crab Stuffed Mushrooms

Assembly and bake

Prepare mushrooms

Preheat oven to 375°F (190°C). Clean mushrooms with a damp cloth. Gently remove stems and set caps aside. Finely chop stems and reserve.

Make filling

In a skillet over medium heat, sauté chopped mushroom stems in a splash of olive oil for 2-3 minutes until softened. Remove from heat. In a bowl, combine cream cheese, mayonnaise, parmesan, Old Bay, garlic powder, lemon juice, chopped parsley, salt, and pepper. Fold in sautéed mushroom stems and lump crab meat until just combined.

Stuff mushrooms

Spoon filling into mushroom caps, mounding slightly. Place filled caps on a baking sheet lined with parchment.

Bake

Bake for 14-18 minutes, until filling is hot and lightly golden on top. If desired, broil for 1-2 minutes to caramelize the tops, watching carefully to avoid burning.

Serve

Remove from oven and let rest 2 minutes. Serve warm with sliced garlic bread on the side.
