Preparation

    Prepare the Potatoes

    Preheat your smoker to 225°F (107°C). Wash and slice the potatoes into thick rounds and season with salt and pepper.

    Smoke the Potatoes

    Place the sliced potatoes in the smoker and smoke them for about 2 hours or until they are tender and infused with a nice smoky flavor.

    Prepare the Toppings

    While the potatoes are smoking, warm the sliced brisket in a skillet over low heat. In another bowl, mix the pimento cheese and red chili sour cream together until well combined.

    Assemble the Dish

    Once the potatoes are smoked, remove them from the smoker. Top each smoked potato slice with a pat of butter, a slice of warm brisket, a generous scoop of the pimento cheese mixture, a drizzle of the mild BBQ sauce, and finish with a handful of onion rings.

    Serve

    Serve the smoked potatoes warm, with any additional BBQ sauce on the side.
