Cook the Pork

Preheat your oven to 300°F (150°C). Place the pork shoulder in a roasting pan, rub it with salt and pepper, and cover tightly with foil. Roast for about 4 hours, or until the meat is tender and easily shreds with a fork.

Make the BBQ Sauce

In a saucepan, heat the BBQ sauce over medium heat until warmed through. Adjust seasoning if needed.

Prepare the Onion Rings

Slice the onion into thin rings. In a bowl, mix the buttermilk, flour, cornstarch, baking powder, salt, and black pepper until smooth. Dip the onion rings into the batter and let excess drip off.

Fry the Onion Rings

Heat vegetable oil in a deep frying pan over medium-high heat. Fry the onion rings in batches until golden brown, about 2-3 minutes per side. Drain on paper towels and season with salt.

Assemble the Sandwich

Once the pork is cooked, shred the meat and mix with the BBQ sauce. Toast the burger buns lightly, and layer with pulled pork, crispy onion rings, and house-made pickles. Serve immediately.
