Prepare the Meatloaf

Preheat the oven to 350°F (175°C). In a large bowl, combine ground beef, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix until just combined.

Shape the Meatloaf

Transfer the meat mixture to a loaf pan and shape it into a loaf. Place in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).

Make the Smoked Tomato Gravy

In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in flour and cook for 1 minute. Add smoked tomatoes and beef broth, stirring until thickened. Season with salt and pepper to taste.

Cook the Green Beans

While the meatloaf is baking, steam the green beans until tender, about 5-7 minutes.

Prepare the Mashed Potatoes

In a pot, boil potatoes until fork-tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste.

Serve the Dish

Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve slices topped with smoked tomato gravy alongside mashed potatoes and steamed green beans.
