    Prepare the Smoked Ancho Butter

    In a small bowl, mix the softened butter with smoked ancho chili powder until well combined. Set aside.

    Season the Steak

    Season the flat iron steak with salt and black pepper on both sides. Let it rest at room temperature for about 15 minutes.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Brush the grill with olive oil. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest for 5 minutes before slicing.

    Fire Roast the Broccolini

    Toss the broccolini with olive oil, salt, and pepper. Grill or roast in the oven at 400°F (200°C) for about 10 minutes until tender and slightly charred.

    Make the Corn Pudding

    In a bowl, combine corn kernels, cornmeal, milk, eggs, salt, and pepper. Mix until smooth. Pour into a greased baking dish and bake at 350°F (175°C) for 25-30 minutes, or until set and golden on top.

    Slice the grilled flat iron steak and serve it topped with smoked ancho butter, alongside fire-roasted broccolini and corn pudding.
