Prepare the Peach Filling
In a bowl, combine the diced peaches, granulated sugar, cinnamon, and lemon juice. Stir well and let sit for about 15 minutes to allow the juices to combine.

Assemble the Pies
Roll out the pie crusts and cut them into circles (approximately 6 inches in diameter). Place a spoonful of the peach mixture in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.

Fry the Pies
Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the pies in batches, cooking for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.

Serve
Place the fried peach pies on a serving plate. Drizzle with salted caramel sauce and serve warm with scoops of vanilla bean ice cream on the side.
