Prepare the Brisket
Trim any excess fat from the beef brisket and place it in a large dish.

Make the Cure
In a bowl, combine the brown sugar, kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Mix well.

Apply the Cure
Rub the cure mixture all over the brisket, ensuring it is evenly coated. Pour the water over the brisket to help dissolve the sugars.

Wrap and Refrigerate
Cover the brisket tightly with plastic wrap or aluminum foil and refrigerate for at least 5 days, flipping the brisket every day.

Rinse and Dry
After 5 days, remove the brisket from the refrigerator, rinse it under cold water, and pat it dry with paper towels.

Cook the Brisket
Preheat your oven to 225°F (107°C). Place the brisket in a roasting pan and cook for 6-8 hours, or until tender.

Once cooked, let the brisket rest for at least 30 minutes before slicing or chopping.
