Prepare the Roast
Take the prime rib roast out of the refrigerator and let it come to room temperature for about 1 hour.

Preheat the Oven
Preheat your oven to 450°F (232°C).

Season the Roast
In a small bowl, mix together black pepper, kosher salt, garlic powder, onion powder, fresh rosemary, and fresh thyme. Rub the olive oil all over the roast, then generously coat the roast with the seasoning mix.

Roasting
Place the seasoned prime rib roast on a rack in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness (e.g., 135°F for medium-rare). This can take about 1.5 to 2 hours depending on the size of the roast.

Once done, remove the roast from the oven and cover it loosely with foil. Let it rest for at least 20 minutes before slicing.

Slice the prime rib to your desired thickness and serve by the ounce with your choice of two sides.
