Preparation Steps

    Prepare the Pie Crust

    Preheat the oven to 375°F (190°C). Roll out the pie crust and fit it into a tart pan. Prick the bottom with a fork and pre-bake for 10 minutes.

    Roast the Vegetables

    In a baking dish, combine the summer squash, roasted tomatoes, sweet onion (sliced), olive oil, salt, black pepper, and fresh thyme. Toss to coat and roast in the oven for 25 minutes, until soft.

    Prepare the Filling

    In a bowl, whisk together the eggs and heavy cream until well combined. Stir in the roasted vegetables and half of the parmesan cheese.

    Assemble the Tart

    Pour the filling into the pre-baked pie crust. Sprinkle the remaining parmesan cheese on top.

    Bake the Tart

    Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown.

    Garnish and Serve

    Remove the tart from the oven and let it cool for a few minutes. Garnish with fresh pea tendrils before slicing and serving.
