Preparation
Prepare all ingredients before cooking.
Cook the andouille sausage
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5-7 minutes. Remove from skillet and set aside.
Sauté the leeks and garlic
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced leeks and minced garlic. Sauté for about 3-4 minutes until leeks are soft.
Add rice and broth
Stir in the Carolina Gold Rice, then add the chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
Cook the shrimp
While the rice is cooking, in a separate pan, add the local shrimp. Season with salt and black pepper. Cook for about 3-4 minutes until shrimp are pink and cooked through.
Combine everything
Once the rice is done, fluff it with a fork. Mix in the cooked andouille sausage, roasted tomatoes, and shrimp. Stir gently to combine.
Garnish and serve
Sprinkle fresh parsley over the top before serving. Enjoy your Local Shrimp dish!
