Pickling and Serving Instructions

    Prepare the Brine

    In a medium saucepan, combine water, white vinegar, mustard seeds, jalapeño, garlic, salt, sugar, and black peppercorns. Bring to a boil, stirring until salt and sugar dissolve.

    Pickle the Shrimp

    Once the brine is boiling, remove it from heat and add the shrimp. Stir to ensure shrimp is coated and submerged. Let it cool to room temperature.

    Refrigerate

    Transfer the shrimp and brine to a glass jar or container, cover, and refrigerate for at least 2 hours, or overnight for best flavor.

    Prepare the Herb Salad

    In a bowl, combine mixed fresh herbs and a drizzle of olive oil, tossing gently.

    Serve

    To serve, place pickled shrimp on a plate, drizzle with citrus aioli, and serve alongside the herb salad.
