Prepare the Farro
In a medium saucepan, bring 3 cups of water to a boil. Add local farro and a pinch of salt. Reduce heat, cover, and simmer for about 25-30 minutes, or until tender. Drain excess water and set aside.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute. Then add mushrooms, asparagus, and sweet peas. Cook for about 5-7 minutes until the vegetables are tender. Season with salt and black pepper to taste.

Cook the Fish
In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the fish fillets with salt and pepper. Cook the fish for about 4-5 minutes per side, or until cooked through and golden brown.

Make the Arugula Salsa Verde
In a small bowl, combine arugula, lemon juice, salt, and a drizzle of olive oil. Toss to combine and set aside.

Serve
On each plate, layer the cooked farro, sautéed vegetables, and top with the cooked fish. Garnish with arugula salsa verde and shaved Parmesan cheese.
