    Prepare the crust

    In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake at 350°F (175°C) for 10 minutes. Remove from oven and let cool.

    Brûlée the bananas

    Slice the two medium bananas for brûlée and place them on a heatproof surface. Sprinkle brown sugar evenly over the top of the banana slices. Using a kitchen torch, carefully caramelize the sugar until golden brown. Set aside to cool.

    Make the filling

    In a large bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

    Assemble the pie

    Spread a layer of sliced fresh bananas over the cooled crust. Pour half of the whipped cream mixture over the bananas, smoothing it out. Add another layer of sliced bananas, and top with the remaining whipped cream.

    Garnish

    Top the pie with the brûléed banana slices, chocolate shavings, and drizzle with caramel sauce. Chill in the refrigerator for at least 2 hours before serving.
