Cooking Directions
- 1
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 2
Prepare the Mushrooms
Clean the portobello caps and remove the stems. Set aside.
- 3
Cook the Spinach
In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted. Remove from heat.
- 4
Make the Filling
In a large bowl, combine the sautéed spinach, chopped artichoke hearts, mozzarella cheese, provolone cheese, bread crumbs, grated parmesan cheese, salt, and black pepper. Mix well to combine.
- 5
Stuff the Mushrooms
Stuff each portobello cap generously with the filling mixture, pressing it down slightly to ensure it holds.
- 6
Bake
Place the stuffed mushrooms on a baking sheet and bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and golden.
- 7
Serve
Remove from the oven, let cool for a few minutes, then serve warm.
