Prepare the Mushrooms
In a skillet over medium heat, add 1 tablespoon of olive oil. Add the sliced mushrooms and sauté until they are golden brown and tender, about 5-7 minutes. Season with salt and pepper. Remove from heat and set aside.

Make the Chive Butter
In a small bowl, combine the butter and chopped chives. Mix well and set aside.

Sear the Scallops
Pat the scallops dry with paper towels and season both sides with salt and pepper. In a large skillet over high heat, add 1 tablespoon of olive oil. Once the oil is hot, carefully place the scallops in the skillet, making sure not to overcrowd them. Sear for about 2-3 minutes on each side until they develop a golden crust and are cooked through. Remove from heat.
