Prepare the Filling
In a skillet over medium heat, add the diced guanciale and cook until crispy. Remove from the skillet and set aside. In the same skillet, add house sausage and cook until browned and fully cooked. Combine the crispy guanciale with the cooked sausage, season with salt and black pepper, and set aside to cool slightly.

Stuff the Dates
Preheat your oven to 375°F (190°C). Carefully slice each Medjool date lengthwise and remove the pit. Stuff each date with the sausage and guanciale mixture.

Bake the Dates
Place the stuffed dates on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for 10-15 minutes until heated through and slightly crispy.

Serve with Sauce
While the dates are baking, warm the spicy tomato sauce in a saucepan. Once the dates are ready, serve them warm, drizzled with spicy tomato sauce and garnished with fresh parsley.
