Preparation Instructions

  1. 1

    Cook the Orzo

In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Salmon

While the orzo cooks, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Sear the salmon for 4-5 minutes on each side, or until cooked through and flaky. Remove from the skillet and set aside.

  3. 3

    Make the Parmesan Aioli

In a small bowl, mix together the grated Parmesan cheese, 1 tablespoon of olive oil, minced garlic, lemon juice, and a pinch of salt. Stir until smooth.

  4. 4

    Combine Ingredients

In the same skillet used for the salmon, add the semi-dried tomatoes, olives, and capers. Stir for 2-3 minutes until heated through. Add the drained orzo and mix well.

  5. 5

    Serve

Plate the orzo mixture, top with the seared salmon, and drizzle with the Parmesan aioli. Garnish with fresh parsley and serve immediately.
