Prepare Polenta
In a medium saucepan, bring water to a boil. Add salt and gradually whisk in polenta. Reduce heat to low and cook, stirring frequently, for about 15 minutes until thickened. Set aside.

Make Green Tomato Caponata
In a skillet, heat olive oil over medium heat. Add onion, bell pepper, and garlic; sauté until softened. Stir in diced green tomatoes, balsamic vinegar, brown sugar, and basil. Cook for about 10 minutes until tomatoes are tender. Set aside.

Wrap Prawns
Preheat grill or oven broiler. Cut prosciutto slices in half lengthwise. Wrap each prawn with a slice of prosciutto and secure with a toothpick if necessary.

Cook Prawns
Place wrapped prawns on the grill or a baking sheet. Cook for about 2-3 minutes on each side or until prawns are opaque and cooked through.

On a plate, serve a bed of polenta topped with green tomato caponata and arrange the prosciutto-wrapped prawns on top.
