    Prepare the Mussels

    Rinse the mussels under cold water and remove any beards. Discard any mussels that are open and do not close when tapped.

    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the nduja sausage and cook until it starts to brown, breaking it up with a spoon.

    Add Aromatics

    Add minced garlic, coriander, and fennel seeds to the pot. Stir and cook for another 2 minutes until fragrant.

    Steam the Mussels

    Add the cleaned mussels to the pot and stir to combine. Cover the pot and steam for 5-7 minutes until the mussels have opened. Discard any mussels that remain closed.

    Prepare Garlic Bread

    While the mussels are cooking, preheat the oven to 375°F (190°C). Mix softened butter with minced garlic and spread it on the sliced crusty bread. Bake for 10-12 minutes until golden.

    Serve

    Remove the pot from heat and sprinkle fresh parsley on top. Serve the mussels with garlic bread on the side, seasoning with salt and black pepper to taste.
