Preparation and Cooking

    Make the Meatballs

    In a large bowl, combine ground beef, ground pork, breadcrumbs, grated parmesan, egg, minced garlic, salt, and black pepper. Mix until well combined.

    Form the Meatballs

    Shape the mixture into small meatballs, about 1 inch in diameter.

    Brown the Meatballs

    In a large pot, heat olive oil over medium heat. Add the meatballs and brown on all sides, about 5-7 minutes. Remove and set aside.

    Prepare the Broth

    In the same pot, add diced prosciutto and sauté for 2-3 minutes until slightly crispy. Pour in the chicken broth and bring to a simmer.

    Cook the Meatballs in Broth

    Return the browned meatballs to the pot and simmer for 15 minutes.

    Add Pasta and Spinach

    Add pastini to the pot and cook according to package instructions, usually about 7-8 minutes. In the last 2 minutes of cooking, stir in the chopped spinach.

    Serve

    Ladle the soup into bowls and sprinkle with additional grated parmesan cheese before serving.
