Prepare the Beef
Season the top round beef with salt, black pepper, garlic powder, onion powder, and Italian seasoning. Rub the seasonings into the meat thoroughly.

Sear the Beef
In a large skillet, heat the olive oil over medium-high heat. Once hot, sear the beef on all sides until browned, approximately 3-4 minutes per side. Remove from heat.

Slow Cook the Beef
Transfer the seared beef to a slow cooker. Pour the beef broth over the meat and add the giardiniera. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix with the juices.

Serve
To serve, place a generous amount of the shredded beef on a sub roll or Italian bread and top with provolone cheese. Optional: melt the cheese under a broiler for a few minutes before serving.
