Prepare the Potatoes
Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, black pepper, and chopped rosemary until evenly coated. Spread the potatoes out on a baking sheet and roast for 25-30 minutes, or until crispy and golden brown. In the last 5 minutes of cooking, sprinkle grated Parmesan cheese over the potatoes and return to the oven to melt.

Cook the Hanger Steak
While the potatoes are roasting, season the hanger steak with salt and black pepper on both sides. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the steak and sear for 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Make the Charred Tomato Sauce
In the same skillet, add the halved tomatoes and minced garlic. Cook over medium heat, stirring occasionally, until the tomatoes are charred and softened, about 5-7 minutes. Stir in the balsamic vinegar and butter, cooking for an additional 2 minutes until combined. Season with salt and pepper to taste.
