    Prepare the Potatoes

    Peel and dice the potatoes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and mash them until smooth.

    Mix the Ingredients

    In a large bowl, combine the mashed potatoes, grated Fontina cheese, grated Parmesan cheese, eggs, flour, salt, and black pepper. Mix until well combined.

    Shape the Crocchetta

    Take small portions of the mixture and shape them into small patties or balls.

    Coat with Breadcrumbs

    Roll each crocchetta in breadcrumbs until fully coated.

    Fry the Crocchetta

    Heat olive oil in a skillet over medium heat. Fry the crocchetta in batches until golden brown on both sides, about 3-4 minutes per side.

    Drain and Serve

    Remove the crocchetta from the skillet and place them on paper towels to drain excess oil. Serve warm.
