Cook the Pasta
Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until it is crispy, about 5-7 minutes.

Add Tomatoes
Pour in the canned tomatoes, breaking them up with a spoon. Season with salt and black pepper. Let the sauce simmer for 10-15 minutes until slightly thickened.

Combine Pasta and Sauce
Add the drained bucatini to the skillet with the sauce. Toss to combine, adding reserved pasta water as necessary to achieve desired consistency.

Serve
Serve the pasta hot, topped with grated Pecorino Romano cheese and additional black pepper to taste.
